About the Producer

Founded in 1959, Les Mouettes d’Arvor is the last remaining fish cannery in Concarneau. Still family-run, the cannery works closely with fishermen along France’s northwestern coast and preserves fish using fully hand-worked, traditional methods.

Sardines and Preparation

Les Mouettes d’Arvor sardines are fished seasonally along the northwestern coast of France, when the fish are at their ideal size. On arrival at the cannery, they are briefly cured in salted ice water, then cleaned by hand, dried, fried, and packed by hand in extra virgin olive oil — a process that preserves their firm texture and natural flavour.
