Salon du Pain 2026 marks one of those moments.

Across two special days on 30–31 May 2026, Ambassadeurs du Pain Malaysia presents a showcase shaped by craft, memory and the quiet work of preparation — bringing together ideas refined through weeks of testing, reflection and repeated practice.

This year’s presentation features a special collaboration between Chef Tomohiro Nogami and KenJay Lim, with the showcase bakes executed by Team Croisserie.

For many, what will be seen is a table of finished breads.

But behind each piece lies a process that began long before the event itself.

The preparation stage has been one of daily refinement — revisiting each bake not simply to repeat what was already decided, but to understand it more clearly.

A slight adjustment in texture.

A reconsideration of balance.

The choice between one ingredient and another.

Small refinements that gradually shape a clearer final expression.

These are often the quietest parts of the work, yet they are what define the final experience.

At the heart of this preparation is a simple pursuit — the relationship between execution and completion.

To elevate the execution of each individual bake is one part of the process.

To bring the whole table closer to its fullest expression is another.

What begins as an idea slowly becomes clearer through repeated testing, thoughtful reconsideration and the willingness to keep refining.

This spirit lies at the centre of this year’s Salon du Pain showcase.

Presented by Ambassadeurs du Pain Malaysia, this two-day collaboration reflects a shared respect for transmission — the passing of knowledge, philosophy and craft from one generation of bakers to the next.

Chef Tomohiro Nogami’s longstanding influence on artisan breadmaking in Malaysia has shaped many hands and many tables over the years.

To present this collaboration today is both a continuation of that journey and a quiet tribute to the values that continue to guide it.

Over these two days, the table will present a series of breads and savoury creations shaped by memory, technique and careful consideration.

Each piece carries its own story.

What will be presented on 30–31 May is not simply a collection of bakes.

It is the result of a process — from elevating the execution of each individual piece, to bringing the whole idea closer to completion.
